Strawberry Cake

Ingredients:

Cake

3 cups almond flour

1/2 cup strawberry puree

3 eggs

1/2 cup honey

2 tbsp coconut oil

1 tbsp vanilla extract

1 tsp baking soda

1 tsp salt

Frosting

1 cup yogurt

2 tbsp honey

4 tbsp potato or tapioca starch

1 tbsp vanilla extract

Directions:

  1. Pre-heat oven to 350 degrees.

  2. Make the strawberry puree by putting strawberries over low heat in a pan and mashing them as they get soft.

  3. Combine and mix the ingredients for the cake batter.

  4. Transfer the cake batter into a cake pan greased with coconut oil.

  5. Bake for 15-25 minutes.

  6. Combine the frosting ingredients in a bowl.

  7. Once the cake cools, place the frosting on the top of the cake

  8. Decorate with fresh strawberries.
